Equipment

  • 1 Candy Thermometer
  • 1 Heavy duty saucepan
  • 1 baking sheet with sides on baking sheet
  • 1 wooden spoon
  • 1 spatula

Ingredients

  • 1 1/2 cup thin cream
  • 2 cup sugar
  • 1/4 cup butter
  • 1 cup honey
  • 1/2 tsp vanilla
  • 1 cup chopped nuts pecans or walnuts

Instructions

  • Lightly butter large backing pan
  • Cook thin cream, sugar, butter and honey over low heat to 254 degree F or hard ball stage
  • Stir constantly toward the end of the cooking period
  • When hard ball stage met, add vanilla and nuts
  • Pour into buttered pan
  • When firm, lightly score for future cutting
  • Cut when cold and wrap individual pieces in wax or parchment paper
