Vegetables Roasted with Honey
A simple, flavorful side dish that pairs perfectly with any main course.
Ingredients
- 1 pound mixed vegetables Cut into 1-inch piece your favorite vegetables such as carrots, parsnips, potatoes, sweet potatoes, busselsprouts, broccoli, and cauliflower are all great options.
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven: Preheat your oven to 425°F (220°C).
- Prepare vegetables: In a large bowl, combine the vegetables, olive oil, honey, thyme, salt, and pepper. Toss to coat evenly.
- Roast: Spread the vegetables in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring occasionally.
- Serve immediately: Enjoy the vegetables hot, straight from the oven.
