Vegetables Roasted with Honey

Ingredients
  

  • 1 pound mixed vegetables Cut into 1-inch piece your favorite vegetables such as carrots, parsnips, potatoes, sweet potatoes, busselsprouts, broccoli, and cauliflower are all great options.
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat oven: Preheat your oven to 425°F (220°C).
  • Prepare vegetables: In a large bowl, combine the vegetables, olive oil, honey, thyme, salt, and pepper. Toss to coat evenly.
  • Roast: Spread the vegetables in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring occasionally.
  • Serve immediately: Enjoy the vegetables hot, straight from the oven.

Notes

Add some spice: For a little kick, add a pinch of red pepper flakes or a drizzle of hot sauce to the vegetables before roasting.
