Equipment

  • 1 mixing bowl with beaters
  • 1 set mixing cups
  • 1 set mixing spoons
  • 1 spatula
  • 1 loaf pan
  • 1 sifter
  • 1 knife to cut up nuts
  • 1 parchment paper to line loaf pan

Ingredients

  • 2 tbsp shortening
  • 1 cup honey (local)
  • 1 egg beaten
  • 1 1/2 tbsp grated orange rind
  • 3/4 cup orange juice
  • 2 1/4 cup flour
  • 2 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup chopped nuts pecans or walnuts

Instructions

  • Cream the shortening and honey well
  • Add the beaten egg and orange rind
  • Sift the dry ingredients and add to the bowl alternately with the orange juice
  • Add the chopped nuts
  • Pour into greased loaf pan, the bottom of which has been lined with parchment paper
  • Bake at 325 degrees for 1 hour or until the loaf is nicely browned and begins to shrink from the sides of the pan
