Select good quality ham. Cooking time will depend on weight of ham. plan on 25 to 30 minutes per pound
Wipe meat with damp cloth
Place ham fat side up in roasting pan. Add no water
Bake uncovered in slow oven (300 degrees F)
Insert meat thermometer with the bulb at the center of the largest part
Cook until the thermometer registers an internal temperature of 170 degrees F (25-23 minutes per pound)
Before the ham is done, take from the oven and remove the rind
Score the ham fat into squares
Place whole clove in each square
Pour a honey glaze over ham (glaze ideas: 1 cup honey--1/2 cup orange juice; 1 cup honey--1/2 cup cider; 1 cup honey--1/2 cranberry juice)
Return to oven to finish backing - baste frequently
