Candied Orange Slices using local Honey

- 2 cup local honey
- 6 mandarin oranges (small)
- 2 cup water
- 6 oz chocolate, melted milk or dark chocolate

Make a simple syrup by combining water and honey in a dutch oven
Bring mixture to low boil
Wash oranges
Use mandolin and slice your oranges between 3/16 and 1/4 inches thick
Once simple syrup boils, add the orange slices one at a time and lower the pot to simmer
Cook for 34-45 minutes. you want the peel to start to look translucent
Remove orange slices to a wire cooling rack and let dry for 24 hours
Don't waste the simple syrup. Bottle it for use later as base for cocktails or a juice drink
Melt the chocolate in a small bowl
Dip dried orange slices, one at a time, into melted chocolate to cover half the slice
Store in air tight container for up to 3 weeks in the fridge
