Oatmeal Cranberry White Chocolate Cookies using local Honey

Equipment

  • 1 mixing bowl and mixer
  • 1 set measuring cups
  • 1 set measuring spoons
  • 2 cookie sheets
  • 1 cookie cooling rack
  • 1 spoon - teaspoon or 1 tsp cookie scoop

Ingredients

  • 2/3 cup butter, softened
  • 2/3 cup local honey local honey
  • 2 large eggs, room temperature
  • 1 1/2 cup old fashioned oats
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 6 oz package dried cranberries
  • 2/3 cup white chocolate chips

Instructions

  • Preheat oven to 350F
  • Beat butter and honey until light and fluffy.
  • Add egg mixing well
  • Combine oats, flour, baking soda and salt in a separate bowl
  • Add to butter mixture in several additions mixing well after each addition
  • Stir in cranberries and white chocolate chips
  • Drop by rounded teaspoonsfulls onto ungreased cookie sheet
  • Bake 10-12 minutes until golden brown
  • Cool on wire cookie rack
